The “Caramel Mousse and Chocolate Eclair” is a limited-time cake offered from September 2025 through October 31, 2025. It’s a brief window of about two months, but as I’ll cover below, the cake is delicious and definitely worth trying.

Detailed Look at the Caramel Mousse and Chocolate Eclair
The cake’s design shows Chip ‘n’ Dale hiding by burying their heads in a tree, with just their tails sticking out. It’s such an adorable little scene!

The Chip side (on the right) is the chocolate eclair, and the Dale side is the caramel mousse.
The chocolate eclair is filled with caramel ganache and chocolate cream, while the caramel mousse holds an orange jelly inside.
The tree section is made of milk chocolate. On top sit mushrooms crafted from custard cream and white chocolate, plus chocolate-coated almonds modeled on the acorns Chip ‘n’ Dale love.
Lift the tree piece, and you’ll find Chip ‘n’ Dale’s noses represented with red currants and pearl chocolate hidden underneath. Every detail has been thought through, making it a treat to look at as well.
Beneath the caramel mousse and eclair, there’s a sheet of what looks like cocoa sable cookie laid out as a base.

Taste Review
From here, I’ll share my impressions after actually trying it. I’ll focus on the headline Caramel Mousse and Chocolate Eclair themed on Chip ‘n’ Dale, then cover the balance of the cake set as a whole.
Caramel Mousse (Dale)
Starting with the caramel mousse modeled after Dale: my first bite from the edge surprised me—the hazelnut flavor came through much more strongly than the caramel. The outermost layer seems to be a hazelnut-flavored mousse (or jelly?). As I worked deeper in, the caramel notes began to dominate over the hazelnut.
The caramel mousse leans burnt-caramel rather than sweet-caramel—nicely bitter and very tasty. The sweetness is restrained, which makes it easy to eat.
Eating it alongside the orange jelly adds a subtle orange note and gives you a fun flavor shift. The orange jelly has almost no tartness; it’s more about the fragrance.
The mousse is soft and smooth throughout. Combining it with the cocoa cookie underneath adds a crunchy texture to the soft mousse, which I really enjoyed.
Finally, pairing a bite with the red currant—meant to represent Chip’s flower—layers the mousse’s gentle sweetness with the currant’s tartness, instantly refreshing the palate. There’s barely any tartness elsewhere, so even though there was just one currant, it acted like a secret weapon for flavor change—a real standout in the best sense.
Chocolate Eclair (Chip)
Next up is the chocolate eclair modeled after Chip.
I’d been told the filling was caramel ganache and chocolate, so I expected something cloyingly sweet—but I was shocked! The sweetness is extremely restrained, with a deeply bitter, grown-up flavor!
The choux pastry isn’t too soft and has a hint of crispness here and there—really enjoyable. The dough looks cocoa-colored, but the filling’s intense flavor made it hard to tell whether the pastry itself was flavored.
As for the filling, the chocolate flavor comes through more strongly than the caramel. As mentioned above, it leans quite bitter—probably the equivalent of 70-80% cacao chocolate. Personally, I prefer bitter chocolate over milk chocolate, so I absolutely loved it.
It’s not entirely without sweetness, but because the bitterness dominates, it’s very easy to eat—the kind of dessert that disappears almost immediately as you keep going back for more.
The Rest (Cake as a Whole)
The milk chocolate of the tree section, the custard cream and white chocolate forming the mushrooms—these elements all serve to highlight the lead Caramel Mousse and Chocolate Eclair.
While the mousse and eclair are restrained in sweetness and on the bitter side, the tree and mushrooms are “full-throttle sweet.” Eating them between bites of the main two adds sweetness and works as a great accent.
Taken together, the cake strikes an excellent balance between sweetness and bitterness, and the whole thing is delicious. My recommendation for how to eat it: rather than polishing off each piece at once, take small bites in turn—you’ll get more enjoyment out of it.
Personally, since so many of my favorite flavors were involved, this was the best cake set I’ve had to date. I’d love to come back for it again.
Who Is This For?
Finally, here are the kinds of people I’d recommend this cake set to.
Anyone who loves caramel or chocolate absolutely has to try this. Especially if you favor bitter chocolate with a high cacao percentage—you’re going to love this flavor profile.
The lead mousse and eclair are restrained in sweetness, so this is also a great pick for those who aren’t big on sugary desserts. On the flip side, it leans quite bitter, so it might not suit younger children. If you’re sharing with kids, the caramel mousse is the more approachable of the two.
