Cold Pescatore Pasta with Soft-Shell Shrimp Fritto
Pescatore is a seafood pasta in a tomato base. From the photo you might miss it, but rotini (spiral pasta) is hiding underneath. The other ingredients include squid, bell pepper, and what looks like capers. The tomato isn’t in chunks — it’s been processed into a smooth paste.
Drizzled over the tomato sauce are basil and olive oil. On top sits the Soft-Shell Shrimp Fritto.

My first impression: this leans pretty heavily on the olive oil. The basil aroma drifts up softly — really nice. The tomato sauce isn’t overly tart, which makes it easy to eat — the kind of sauce that keeps you going without effort. Those caper-like bits are probably actual capers — slightly tart, which makes a great accent.
The Soft-Shell Shrimp Fritto on top is excellent — the lightly fried shrimp is crisp and tasty.
