Hyperion Lounge at Disney Ambassador Hotel is a popular restaurant where you can enjoy “Cake Sets” and “Special Sweets Sets” that change with the seasons and events.

Some menu items require reservations, but there are also walk-in items, and the “Hyperion Cake Set” is one of them. Since the Hyperion Cake Set also changes its cake contents seasonally, many fans look forward to seeing what kind of cake will appear each time.

The “Hyperion Cake Set” available from November 2025 features a “Chocolate and Earl Grey Cake” inspired by the Sorcerer’s Apprentice from the movie “Fantasia.”

I tried it right away, so this time I’ll report in detail on this “Chocolate and Earl Grey Cake.” It looked very cute and tasted delicious!

Details of the Chocolate and Earl Grey Cake

The cake’s design is inspired by Mickey as he appears in the Sorcerer’s Apprentice scene from the movie “Fantasia.”

The cake’s centerpiece is the magic hat Mickey wears, and the robe and cord he wears are also reproduced around it.

The look is simply adorable — a design that fans of “The Sorcerer’s Apprentice” won’t be able to resist!

Looking inside the cake, the conical part of Mickey’s hat is an Earl Grey tea mousse. There’s also chocolate ganache toward the bottom of the mousse.

The brim of the hat is a donut-shaped orange-flavored chocolate mousse, and inside the donut shape there is royaltine, orange peel, and hazelnuts. The base of the cake at the very bottom is a cocoa sponge.

Mickey’s ears, the stars, and the rope-like parts around the cake are all chocolate, and the part representing Mickey’s red robe is a strawberry and raspberry jelly.

Tasting Review

From here, I’ll report on what it was actually like to eat.

Two well-balanced mousses

First, let me report on the main Earl Grey tea mousse and the chocolate mousse.

The Earl Grey tea mousse has a subtle Earl Grey aroma that gently passes through the nose, and it leans more refreshing than sweet. There’s chocolate ganache in the center, and eating it together adds a hint of chocolate flavor — delicious.

On the other hand, the chocolate mousse is a sweeter mousse, like milk chocolate, making it a contrast to the Earl Grey tea mousse. Even though I say sweet, it’s only mildly sweet, so you can keep eating it without trouble. It was supposed to be orange-flavored, but the orange peel in the center had a stronger flavor, so I couldn’t really sense the orange in the mousse itself.

Before eating, I had predicted that the chocolate mousse’s flavor would be strong and that the Earl Grey tea mousse’s flavor would lose out partway through… but the balance between the two mousses was very good. As I kept eating, neither one was overpowered by the other, and I was able to enjoy both deliciously to the very end.

The royaltine in the center doubles the deliciousness!

Next, I’ll report on the central part inside the chocolate mousse.

The center contains royaltine (something like crushed thin cookie pieces) and orange peel, but when I ate it, the hazelnut flavor came through pretty strongly! I couldn’t tell whether actual hazelnut pieces were included, but the flavor was firm and it pairs very well with the surrounding chocolate mousse!

The orange peel was included in slightly larger pieces, roughly 5mm cubes, and it too has firm flavor and texture. For those who don’t like orange peel, this size might be quite noticeable. The orange aroma that passes through the nose makes a nice accent against the surrounding mousse and is very delicious!

The smooth mousse gains a firm, crunchy texture, so eating them together doubles the deliciousness!

The cocoa sponge that serves as the base also has a solid cocoa flavor, so eating it together with the rest makes the flavor even richer!

The decorations around it are also great accents!

Finally, the chocolate decorations around the cake and the strawberry and raspberry jelly.

Mickey’s ears, the rope, and the stars are all made of chocolate, and they did good work in enhancing the cake!

First, the rope part is a slightly softer chocolate and is the sweetest part of this cake. When you want to add some sweetness while eating the cake, eating it together with another component gives a different taste!

Next, the chocolate that makes up Mickey’s ears. In contrast to the rope, this is a bitter chocolate. It’s just right when eaten later, when the sweetness starts to feel like a bit much!

Lastly, the strawberry and raspberry jelly. This is the only part of the cake that has a tartness to it! It’s not subtle — it has a firm acidity, so it pairs perfectly with the sweet mousse!

There’s not much of it, so I recommend eating it together with the mousse later in your tasting!

Summary

How did you like it? This time I introduced the Hyperion Cake Set “Chocolate and Earl Grey Cake” served at Hyperion Lounge in Disney Ambassador Hotel.

With a very cute design inspired by the Sorcerer’s Apprentice from the movie “Fantasia,” and a great balance of flavors, it was a truly delicious cake!

It’s a cake I’d absolutely recommend not just to Fantasia fans, but also to anyone who loves chocolate or tea. The number of servings is limited, but no reservations are required, so if you’re curious, feel free to drop by.
