The Cake: Salted Caramel Mousse with Tonka Bean Ganache

The cake’s design captures Mickey casting spells in his dream. The blue mousse layer is a salted caramel mousse, and inside it you’ll find tonka bean ganache — tonka beans have a flavor close to vanilla bean — along with raspberry jelly. A bit more tonka bean ganache and a pinch of salt are sprinkled on top, and the Mickey Mouse silhouette is made of sugar candy. The base is a cocoa sponge cake. Taking a spoonful, the first thing that hit me was the banana flavor — strong enough that anyone would immediately recognize it as banana. That said, thanks to the yogurt drink base and the mango sauce, it doesn’t have that heavy, dense banana weight; instead, it’s light and refreshing, which makes it really enjoyable. Banana purée and banana ice cream are both in there too, but rather than tasting like separate components, everything melts together into one flavor. I’d actually gone a bit off bananas as an adult, but this was so light and tasty that it disappeared in no time. I could have gone for a second one!
